Chocolate Soufflé

- 1/2 cup plus 1 tbsp. granulated sugar, divided
- 3 tbsp. butter
- 3 tbsp. all-purpose flour
- 1 cup whole milk
- 2 squares (2 oz.) unsweetened chocolate, melted
- 1 tsp. vanilla extract
- 4 large eggs, separated
- 1/8 tsp. salt
- 2 tsp. confectioners’ sugar

Preheat oven to 350°F. Grease a 1-quart round soufflé dish or deep baking dish with a straight side. Dust with 1 tbsp. granulated sugar.

Melt the butter in a small saucepan over medium heat. Stir in the flour. Cook for about 1 minute. Add the milk. Cook, stirring constantly, until thickened, 1–2 minutes. Remove from heat. Stir in the remaining granulated sugar, the chocolate and vanilla. Cool slightly. Beat the egg yolks in a small bowl. Stir into the chocolate mixture.

Place the egg whites and salt in a large bowl. Beat with an electric mixer set on high speed until stiff peaks form but the mixture is still glossy. Transfer about 1 cup egg whites to the chocolate mixture. Stir well.

Fold the remaining whites into the batter. Pour into the prepared baking dish. Bake until the center is set, 30–35 minutes. Sprinkle with the confectioners’ sugar. Serve immediately.
