Meringue Melts

1 hour 40 minutes“Sweet, crispy meringue layers, filled with whipped cream and bursting with fresh raspberries, make the prettiest desserts!”
Ingredients
Serves 4
- 2 large egg whites
- 1/4 cup granulated sugar
- 1/2 cup confectioners’ sugar
- 1/2 cup whipping cream
- 4 tbsp. ready-made raspberry sauce
- 1 1/4 cups fresh raspberries
- mint leaves for garnish

Preheat oven to 225°F. Line 2 baking sheets with parchment paper. Place the egg whites in a medium bowl. Beat with an electric mixer set on medium speed until stiff peaks form. Add the granulated sugar and beat until blended. Fold in the confectioners’ sugar.

Place 6 spoonfuls of the sugar mixture on each prepared baking sheet. Spread each spoonful into a 3-inch circle with the back of a wet knife.

Bake the meringues until crisp, about 1 hour 40 minutes. Peel away the parchment paper. Cool the meringues on a wire rack. Meanwhile, place the whipping cream in a medium bowl and beat with an electric mixer set on medium speed until soft peaks form. Stir in the raspberry sauce.

Top 8 meringues with a spoonful of the whipped cream and 3 raspberries. Stack two of the whipped-cream topped meringues; place a plain meringue on top. Repeat to form 4 meringue melts. Decorate with raspberries and mint leaves. Serve.

• Prepare the meringues up to a few days ahead. Allow them to cool completely after baking, then place between layers of parchment paper and store in an airtight container until needed.
