Cherry Clafouti

45 minutesLike fresh cherries, canned cherries can be pricey. Any soft canned fruit, including plums or apricots, will work in this homey pudding-type dessert. Use an equal amount and drain well.
Ingredients
Serves 6
- 4 eggs
- 3/4 cup sugar
- 1 cup milk
- 3/4 cup all-purpose flour
- 1/8 teaspoon salt
- 2 teaspoons vanilla extract
- 1 (15-ounce) can sour cherries, drained
- 1/4 cup confectioners' sugar

Preheat oven to 375°F. Grease an 8- or 9-inch pie dish. Combine eggs, sugar and milk in a medium bowl; whisk until blended.

Add flour, salt and vanilla to bowl; whisk until smooth.

Arrange cherries in prepared dish. Pour batter over cherries. Place dish on a baking sheet. Bake for 10 minutes.

Reduce oven temperature to 350°F. Bake clafouti until a toothpick inserted in center comes out clean, about 35 minutes. Sift confectioners' sugar over top.
