Cranberry-Apple Crisp

All-purpose apples, good both for eating raw and for cooking, are usually the least expensive apples sold in the market. Choose from such varieties as Cortland, Crispin, Granny Smith, McIntosh or Winesap.

Ingredients

Serves 6 

  • 3/4 cup sugar
  • 1 teaspoon cornstarch
  • 3 tablespoons cold water
  • 1 cup fresh or frozen cranberries, thawed
  • 4 apples, peeled, sliced
  • 1/2 teaspoon almond extract
  • TOPPING:
  • 1/2 cup rolled oats
  • 1/2 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter or margarine, softened
Directions

    Combine sugar and cornstarch in a large saucepan. Add water and cranberries. Cook over medium-low heat, stirring constantly, until cranberries begin to pop, about 5 minutes.

    Preheat oven to 350°F. Grease a medium round casserole. Add apples and almond extract to saucepan; mix well. Spoon apple mixture into prepared casserole.

    For topping, combine oats, brown sugar, flour, cinnamon and butter in a bowl. Mix with a pastry blender or 2 knives until crumbly.

    Spoon topping over fruit. Bake until light brown and bubbly, about 35 minutes. Spoon into individual dessert bowls.
