Lemon Ricotta Mousse

none“Save both money and calories by substituting plain or lemon-flavored yogurt for the whipping cream called for in this light and refreshing dessert. The result will be tangier but still cold, creamy and lemony.”
Ingredients
Serves 4
- 2 cups ricotta cheese
- 1/3 cup whipping cream
- 1/2 cup confectioners' sugar
- 1 tablespoon grated lemon peel, divided
- 1/2 teaspoon lemon extract
- 1/4 teaspoon vanilla extract
Directions

Combine ricotta cheese, whipping cream, confectioners' sugar, half of lemon peel, lemon extract and vanilla in a medium bowl.

Beat with an electric mixer set at medium speed until smooth and well blended, about 3 minutes.

Spoon into 4 sherbet or pudding cups, or parfait glasses.

Chill until cool, about 20 minutes. Top each pudding with a pinch of remaining lemon peel before serving.
