Lemon Ricotta Mousse

Save both money and calories by substituting plain or lemon-flavored yogurt for the whipping cream called for in this light and refreshing dessert. The result will be tangier but still cold, creamy and lemony.

Save both money and calories by substituting plain or lemon-flavored yogurt for the whipping cream called for in this light and refreshing dessert. The result will be tangier but still cold, creamy and lemony.

Ingredients

Serves 4 

  • 2 cups ricotta cheese
  • 1/3 cup whipping cream
  • 1/2 cup confectioners' sugar
  • 1 tablespoon grated lemon peel, divided
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon vanilla extract
Directions
  1. 1

    Combine ricotta cheese, whipping cream, confectioners' sugar, half of lemon peel, lemon extract and vanilla in a medium bowl.

    Beat with an electric mixer set at medium speed until smooth and well blended, about 3 minutes.

    Spoon into 4 sherbet or pudding cups, or parfait glasses.

    Chill until cool, about 20 minutes. Top each pudding with a pinch of remaining lemon peel before serving.
