Raisin Bread Pudding

Bread pudding is a delicious and economical way to salvage most stale bread. If you do not want to buy raisin bread, use whatever bread you have on hand and add 1/2 cup of raisins in step 2.

Bread pudding is a delicious and economical way to salvage most stale bread. If you do not want to buy raisin bread, use whatever bread you have on hand and add 1/2 cup of raisins in step 2.

Ingredients

Serves 6 

  • 5 slices raisin bread, cubed
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon or ground nutmeg
Directions

    Grease a small casserole or baking dish. Cover bottom of dish with bread cubes.

    Combine eggs, milk, vanilla, sugar and cinnamon in a medium bowl; mix with a fork until frothy. Pour over bread. Let stand for 10 minutes.

    Preheat oven to 350°F. Place dish in a large baking pan. Add enough water to reach 1 inch up sides of dish.

    Bake until pudding is set in center and lightly browned, about 35 minutes.

Save time and cook the pudding in the microwave. Cover with plastic wrap and microwave on HIGH for about 7 minutes. Rotate casserole; microwave for about 7 minutes longer or until set in the center.
