Sour Cream-Banana Pudding

noneFor economy-size savings, buy vanilla wafers in the economy-size box. Use them for banana pudding, piecrusts and snacks. If they become stale, re-crisp them in a 250°F oven for 10 minutes.
Ingredients
Serves 6
- 1 (5-ounce) package vanilla instant pudding mix
- 2 1/2 cups milk
- 1 cup fat-free sour cream
- 8 ounces whipped topping
- 4 large bananas
- 1 (12-ounce) package vanilla wafers
Directions

Combine pudding mix and milk in a medium bowl. Beat with an electric mixer set at medium speed until thick, about 2 minutes.

Add sour cream to bowl; beat well. Add whipped topping to bowl; stir gently.

Slice bananas and add to bowl; stir gently. Crush enough vanilla wafers to measure 1/2 cup; set aside. Line a 11/2-quart round dish with vanilla wafers.

Top with a third of the pudding, then another layer of vanilla wafers. Continue layers of pudding and wafers. Sprinkle reserved wafer crumbs over top. Chill until serving time.

To quickly and easily crush vanilla wafers, place them in a resealable plastic bag and use a rolling pin to crush them to the desired consistency.
