Easy Cassoulet

A traditional cassoulet has more than 30 ingredients and takes many hours to make. Grandma's easy version tastes like the classic dish, but uses a few of her clever shortcuts.

A traditional cassoulet has more than 30 ingredients and takes many hours to make. Grandma's easy version tastes like the classic dish, but uses a few of her clever shortcuts.

Ingredients

Serves 4 

  • 2 sweet Italian sausage links (about 2 ounces each)
  • 4 strips bacon
  • 2 cans (15 1/2-ounce each) navy beans, rinsed and drained
  • 1 can (14 1/2-ounce) diced tomatoes with garlic and onion
  • 2/3 cup low-sodium chicken broth
  • 2 medium carrots, chopped
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 2 ounces soft French bread, cubed
  • 1 tablespoon olive oil
Directions

    Preheat oven to 400°F. Place the sausage and bacon on an ungreased baking sheet. Bake until cooked through, about 15 minutes.

    Meanwhile, combine the beans, tomatoes, broth, carrots, thyme, pepper and bay leaf in an ungreased 2-quart baking dish. Cut the sausage into 3/4-inch slices and the bacon into 1/4-inch pieces. Stir the sausage and bacon into the bean mixture in the baking dish. Bake until bubbly, about 45 minutes.

    Place the bread cubes in a mini-processor bowl. Cover and process the bread until pea-size crumbs form. Combine the bread crumbs and oil in a small bowl until evenly coated. Sprinkle the bread crumb mixture over the bean mixture in the baking dish. Bake until golden brown, about 15 minutes. Serve.

Grandma's Secret Tip

This dish contains a bay leaf, as thick soups and casseroles often do. With a soup, it’s easier to remove the bay leaf before serving—with this casserole, just keep an eye out for the bay leaf when serving up the dish, and remove it.
