Crunchy-Topped Lima Beans

There are two types of parsley: curly and Italian or flat-leaf. The Italian has more flavor, but may be more expensive. Either will produce a delicious casserole; use the one that's least expensive.

Ingredients

Serves 6 

  • 1 (10-ounce) package frozen lima beans
  • 1/4 cup water
  • 1 (10-ounce) can Cheddar cheese soup
  • 1/2 cup milk
  • 3/4 cup sliced celery
  • 1/4 cup chopped parsley
  • 1 (3 1/2-ounce) can French-fried onion rings
Directions

    Preheat oven to 350°F. Combine lima beans and water in a microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on HIGH for 5 minutes. Drain well.

    Combine soup, milk, beans, celery and parsley in a medium bowl. Stir well. Grease a medium baking dish.

    Add half the onion rings to bowl. Spoon into prepared baking dish. Bake until hot and bubbly, about 35 minutes.

    Arrange remaining onion rings around border of casserole. Bake until onion rings are crispy, about 10 minutes longer.
