Steamed Collard Greens

10 minutesCollards are a Southern staple, and may be difficult to find fresh during certain times of the year. If you cannot find any collards, use kale, turnip, beet or mustard greens.
Ingredients
Serves 4
- 2 pounds collard greens
- 1 1/2 cups water
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon pepper
- 2 tablespoons margarine
- 1/2 teaspoon white vinegar
Directions

Soak collard greens in plenty of water; drain. Rinse each leaf. Cut out and discard tough center ribs.

Tear leaves into bite-size pieces. Place in a large pot. Add water, salt and red pepper flakes.

Bring collard mixture to a boil over medium-high heat. Cover; steam until collards are tender, about 10 minutes. Drain.

Place collards in a serving bowl. Add pepper, margarine and vinegar; toss until margarine is melted.

Leftover greens make a delicious quiche-type pie. Combine 1 cup cooked greens with 2 eggs, 1/4 cup milk and 4 ounces shredded Monterey Jack cheese. Pour into a prepared pie crust. Bake at 350°F for 45 minutes.
