Using yellow rice mix can cost up to 10 times more than creating your own. Simply use a common brand of long grain rice and 1/2 teaspoon turmeric in step 2 and you will save a bundle.

Ingredients

Serves 4 

  • 1 small onion
  • 1 (5-ounce) package yellow rice mix
  • 1 (10-ounce) can beef consommé
  • 2 tablespoons butter
  • 1 (2-ounce) jar chopped pimiento
Directions
  1. 1

    Preheat oven to 375°F. Grease a medium baking dish.

    Chop onion. Combine onion, rice mix, consommé and butter in prepared baking dish; mix well.

    Bake, covered, until rice is tender, about 45 minutes.

    Fluff rice with a fork. Garnish with chopped pimiento.
