Garlic Pork with Peppers

40 minutesPork tenderloin is the most expensive cut of pork. To save money without sacrificing flavor, use boneless pork loin that is trimmed and thinly sliced. Look for any weekly supermarket specials.
Ingredients
Serves 4
- 2 tablespoons minced garlic
- 1/2 teaspoon salt
- 1 teaspoon crushed black peppercorns
- 2 pounds pork tenderloin, thinly sliced
- 2 tablespoons vegetable oil
- 4 red bell peppers, sliced
- 1 cup dry white wine or chicken broth
- 1/2 cup chicken broth
Directions

Combine garlic, salt and crushed pepper-corns in a medium bowl. Add pork; stir well.

Heat oil in a large skillet over medium-high heat. Add pork. Cook until browned, about 5 minutes. Remove from skillet.

Add bell peppers to skillet. Cook until tender, about 10 minutes. Remove from skillet. Add wine and broth; stir, scraping up any brown bits from bottom of pan.

Return pork to skillet; reduce heat to low. Simmer until tender, about 20 minutes. Return peppers to skillet. Cook for 5 minutes longer.
