Smoked Pork with Cranberry Sauce

40 minutes“To make your own inexpensive cranberry sauce, mix 12 ounces of frozen cranberries, 1 cup sugar and 1 cup water in a pan. Cook until cranberries pop, about 10 minutes; skim off white foam. Refrigerate to cool.”
Ingredients
Serves 6
- 6 smoked pork chops (1/2-inch thick)
- 1 (16-ounce) can whole cranberry sauce
- 1 (10-ounce) can tomato soup
- 1 envelope onion soup mix
- 2 cups water
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1 tablespoon chopped red bell pepper
- 1 cup white rice
- 1/4 cup frozen green peas, thawed
Directions

Preheat oven to 350°F. Spray a large skillet with cooking spray. Cook pork chops over medium-high heat until lightly browned on both sides, about 3 minutes. Arrange pork in a large baking dish.

Combine cranberry sauce, tomato soup and soup mix in a saucepan. Cook, stirring occasionally, over medium heat until warm. Pour over pork; cover. Bake about 40 minutes.

Meanwhile, combine water, salt, ginger and bell pepper in a medium saucepan. Stir in rice. Bring to a boil; reduce heat. Cook, covered, until rice is tender, about 15 minutes.

Remove saucepan from heat. Stir in peas. Let stand, covered, for 5 minutes. Serve pork chops and sauce over rice.
