Spicy Peanut Soup

Ingredients

Serves 6 

  • 4 tablespoons butter
  • 1 cup creamy peanut butter
  • 3 tablespoons all-purpose flour
  • 3 tablespoons finely chopped onion
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon grated gingerroot
  • 1/4 teaspoon hot pepper sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 cup whipping cream
  • 1/4 cup chopped peanuts, optional for garnish
Directions

    Melt the butter in a large saucepan over medium heat. Add peanut butter, flour, onion and garlic and mix well.

    Cook the mixture, stirring continually, until smooth.

    Add chicken broth, gingerroot, hot pepper sauce, salt and white pepper to peanut butter mixture and whisk until well mixed.

    Cook over low heat, stirring occasionally, until thickened, about 20 minutes.

    Add the whipping cream to the peanut butter mixture and mix well. Cook, stirring occasionally, until heated through. Ladle into soup bowls. Garnish with chopped peanuts, if desired.

Grandma's Secret Trick

Grandma's Secret Trick

As a variation, Grandma sometimes served this soup over rice noodles or pasta. She made the soup, omitting the whipping cream, and poured the mixture over cooked rice noodles or angel hair pasta. Then she topped the servings with chopped peanuts or toasted sesame seeds.
