Apricot-Glazed Pork Loin

Ingredients

Serves 10 

  • 1 (8-ounce) jar apricot preserves
  • 1/2 cup white wine Worcestershire sauce
  • 1/4 cup olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/4 teaspoon white pepper
  • 1 (4-pound) boneless pork loin roast
Directions

    Preheat the oven to 350ºF.

    For the glaze, combine preserves, white wine Worcestershire sauce, olive oil, garlic, rosemary, parsley and white pepper in a medium saucepan and mix well.

    Cook glaze over medium heat, stirring frequently, just until heated through, about 4 to 5 minutes.

    Place the pork in a shallow roasting pan. Spoon half the glaze over the pork.

    Bake, basting with remaining glaze every 15 minutes, until an instant-read meat thermometer inserted in center of roast registers 145ºF to 150ºF, about 2 1/4 hours.

Grandma loved white wine Worcestershire sauce, which is much lighter and milder than regular Worcestershire. But sometimes she couldn’t find it at her grocery store. If she was running low, for this recipe she’d substitute 1 tablespoon regular Worcestershire plus 1/2 cup white wine or chicken stock.
