Bacon-Wrapped Pork Medallions

Ingredients
Serves 4
- 1 1/2 pound pork tenderloin
- 1 teaspoon cracked peppercorns
- 8 strips bacon
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 tablespoons cider vinegar
- 1/3 cup chicken broth
- 1/4 cup maple syrup
- 1 teaspoon fresh rosemary leaves or 1/4 teaspoon dried

Cut the pork crosswise into eight 11/2-inch-thick medallions. Wrap 1 bacon strip around each medallion. Secure with toothpicks as needed. Sprinkle the pork with the peppercorns.

Heat the oil in a large skillet over medium heat. Add the pork, in batches if necessary. Cook until browned, about 5 minutes on each side. Carefully stand the medallions on the sides. Cook, turning occasionally, until the bacon is browned, about 3 minutes longer. Remove from the skillet. Keep warm.

Drain all but 1 tablespoon bacon fat from the skillet. Add the butter. Stir in the vinegar. Cook for 1 minute. Add the broth, maple syrup and rosemary. Bring to a boil, stirring constantly. Reduce heat to medium- low. Simmer until the sauce is slightly thickened, about 3 minutes longer. Return the pork to the skillet, turning to coat with the sauce. Cook until the pork is hot and the sauce is bubbly, about 2 minutes more. Remove the toothpicks. Serve the pork with the sauce.
