Bean & Ham Casserole

After a day of holiday shopping, this was the easy, make-ahead casserole Grandma served.

After a day of holiday shopping, this was the easy, make-ahead casserole Grandma served.

Ingredients

Serves 6 

  • 1 pound boneless cooked ham
  • 3 (15-ounce) cans Great Northern beans, drained, rinsed
  • 1 small onion, diced
  • 1 medium Granny Smith apple, diced
  • 3 tablespoons dark molasses
  • 3 tablespoons firmly packed light brown sugar
  • 1 tablespoon Dijon-style mustard
  • 1 teaspoon ground allspice
  • 1 green onion, thinly sliced, or 1 tablespoon chopped fresh parsley
Directions

    Preheat oven to 350°F. Cut ham into 1-inch cubes. Combine ham, beans, onion, apple, dark molasses, brown sugar, mustard and allspice in a 3-quart casserole dish; mix well.

    Cover dish; bake until all liquid is absorbed and casserole is hot and bubbly, about 50 to 60 minutes.

    Sprinkle with sliced green onions just before serving.

If Grandma's pantry was out of Great Northern beans, she made her \"jumbled bean\" version of this hearty casserole. Grandma used a combination of beans-pinto, kidney, garbanzo and black beans-for a crazy quilt of colors and textures. A loaf of crusty bread rounded out the meal, along with some of her chewy oatmeal cookies for dessert.
