Ingredients

  • 4 tablespoons soy sauce, divided
  • 2 tablespoons cornstarch, divided
  • 2 teaspoons minced gingerroot or 1/8 teaspoon ground ginger
  • 1 teaspoon granulated sugar
  • 1 clove garlic, minced
  • 1 (8-ounce) top sirloin steak
  • 1 pound broccoli
  • 1 cup water
  • 3 tablespoons peanut oil
  • 1 onion, coarsely chopped
  • 1 carrot, cut diagonally into 1/8-inch-thick slices

Directions

    Combine 1 tablespoon each soy sauce and cornstarch in a large bowl; mix well. Add gingerroot, granulated sugar and garlic and mix well.

    Cut steak across the grain into thin slices. Add to soy sauce mixture and toss to coat. Let stand for 15 minutes.

    Remove florets from broccoli and cut large florets in half. Cut the stems into 1/8-inch-thick slices.

    Combine remaining soy sauce, remaining cornstarch and water in a small bowl; mix well.

    Heat 1 tablespoon peanut oil in a large skillet over high heat. Stir-fry steak in hot oil for 1 minute; transfer steak with a slotted spoon to a large bowl. Add remaining peanut oil to skillet. Stir-fry broccoli, onion and carrot in hot oil until crisp-tender, about 4 minutes.

    Stir steak and soy sauce mixture into vegetable mixture. Bring to a boil. Cook, stirring continually, until thickened, about 2 minutes. Serve hot.
