Ingredients

  • 1 (7-ounce) package macaroni and cheese
  • 1 pound ground beef
  • 1/2 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 2 tablespoons chopped onion
  • 1 (11-ounce) can Mexican corn, drained
  • 1 (6-ounce) can tomato paste
  • 3/4 cup water
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 (2 3/4-ounce) package potato chips, crushed

Directions

  • 1
    Preheat oven to 350ºF. Grease a 11/2-quart baking dish.
  • 2
    Prepare macaroni and cheese using package directions.

    Combine ground beef, celery, bell pepper and onion in a large skillet. Cook over medium-high heat, stirring frequently, until ground beef is browned and crumbly and vegetables are tender, about 8 minutes; drain well.

    Add Mexican corn, tomato paste, water, salt and black pepper to ground beef mixture and mix well. Stir in macaroni and cheese.

    Spoon into prepared baking dish. Sprinkle with crushed potato chips. Bake until hot and bubbly, about 15 to 20 minutes.

Grandma's Secret Trick

If she didn't have tomato paste on hand, Grandma had a useful substitution. She used 1 cup of canned chopped tomatoes instead, and omitted the water. She usually added 1/4 teaspoon of sugar, as tomato paste is slightly sweeter than canned tomatoes.
