Beef Tacos with Zucchini Salsa

Ingredients

Serves 4 

  • 1 pound beef top round steak
  • 2 tablespoons fresh lime juice
  • 2 teaspoons vegetable oil
  • 2 large cloves garlic, crushed
  • ZUCCHINI SALSA:
  • 1 cup chopped tomato
  • 1/2 cup diced zucchini
  • 1/4 cup chopped cilantro or parsley
  • 1/4 cup prepared salsa
  • 1 tablespoon fresh lime juice
  • 8 flour tortillas
  • 1 lime, cut into wedges
Directions

    Combine beef, lime juice, vegetable oil and garlic in a resealable plastic bag. Refrigerate for 20 minutes, turning once.

    Preheat grill. Meanwhile, for zucchini salsa, combine tomato, zucchini, cilantro, salsa and lime juice in a small bowl. Refrigerate. Wrap tortillas in foil.

    Remove steak from marinade. Grill steak, turning occasionally, for 10 minutes for medium. Place wrapped tortillas on a far corner of grill to warm for 5 minutes.

    Trim steak. Cut crosswise into thin slices. Serve beef with tortillas, lime wedges and zucchini salsa.

To heat tortillas quickly without their drying out, stack them on a microwave-safe plate. Invert another plate on top. Microwave for 60 seconds. Check the tortillas halfway through cooking and flip them if necessary.
