Bordeaux Beef Skillet

Ingredients

  • 2 pounds top sirloin steak
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup Catalina salad dressing
  • 3 medium onions, quartered
  • 1 cup water
  • 1/3 cup beef broth
  • 1/3 cup red Bordeaux wine, or 1/4 cup beef broth plus 2 tablespoons red-wine vinegar
  • 2 cups mushroom caps
  • 1 (15-ounce) can tiny carrots, drained
  • 3 cups hot, cooked rice

Directions

    Cut steak into 1-inch cubes. Combine flour, salt and black pepper in a large bowl. Coat the steak cubes with the flour mixture.

    Heat salad dressing in a large skillet over medium-high heat. Sauté steak cubes and onions in hot salad dressing until browned, about 4 minutes.

    Add water, beef broth and red wine to skillet and mix well.

    Reduce the heat to low. Cover skillet and cook, stirring occasionally, for 50 minutes.

    Stir in mushrooms and carrots; cover skillet and cook, stirring occasionally, for 10 minutes. Spoon rice onto a serving platter. Top with the steak mixture.

Grandma's Secret Trick

To keep from having to wash a bowl, Grandma often combined the flour, salt and black pepper in a paper or plastic bag, added the steak cubes, and shook to coat the cubes with the flour mixture. After adding the steak cubes to the skillet, she disposed of the bag.
