Cheeseburger Skillet

20 minutes“Grandma often turned to one-skillet meals like this when my dad and his sisters were growing up. Macaroni, beef, veggies and cheese made everyone happy.”
Ingredients
Serves 6
- 1 (7-ounce) package macaroni and cheese
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 package (16 ounces) frozen carrots, broccoli and cauliflower blend
- 1/3 cup ketchup
- 1/2 teaspoon mustard
- 1/2 teaspoon minced garlic
- 3/4 cup shredded Cheddar cheese
- 1/2 teaspoon salt

Prepare the macaroni and cheese according to the package directions.

Meanwhile, cook the beef and onion in a 12-inch skillet over medium-high heat, stirring occasionally, until the beef is browned and crumbly, about 8 minutes. Drain.

Add the frozen vegetables, ketchup, 1/4 cup water, the mustard and garlic to the skillet and mix well. Cook until the vegetables are tender, about 8 minutes. Stir in the Cheddar and salt. Cook, stirring constantly, until the cheese is melted.

Stir the cooked macaroni and cheese into the vegetable mixture in the skillet. Mix well. Cook, stirring occasionally, until heated through. Serve immediately.

Grandma sometimes liked to add a bread-crumb topping to add crunch: She would sauté 1/2 cup of bread crumbs in 2 tablespoons butter until crisp, then sprinkle a little bit over each serving.
