Classic Wiener Schnitzel

Ingredients
Serves 4
- 1/2 cup all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 large eggs, beaten
- 1 cup seasoned bread crumbs
- 8 slices veal scaloppine (about 1 lb.)
- 1/4 cup (1/2 stick) butter, divided
- 4 lemon wedges
Directions

Combine the flour, salt and pepper in a shallow dish. Mix well. Place the eggs and the bread crumbs in separate shallow dishes. Dip each veal slice in the flour mixture, then in the eggs and finally in the bread crumbs.

Melt 2 tbsp. butter in a large nonstick skillet over medium-high heat. Add 4 breaded veal slices.

Cook the veal, turning once, until golden brown on both sides, 3–4 minutes. Transfer to a serving platter and keep warm.

Repeat with the remaining butter and veal slices. Squeeze the lemon wedges over the veal and serve.

Use two skillets if possible so you can cook the veal slices all at once; the cooked veal will be more tender if served immediately.

Serve with sautéed zucchini and mushrooms. Finish the meal with apple strudel.
