Crispy Golden Pork

A delicious herb coating perks up tender pork tenderloin, sealing in the meat’s juices and adding a bit of crunch.

Ingredients

Serves 4 

  • 4 pork tenderloins (about 6 oz. each)
  • 1/4 cup bread crumbs
  • grated rind of 1 lemon
  • 1 tbsp. chopped fresh sage
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 2 tbsp. all-purpose flour
  • 1 egg, beaten
  • 2 tbsp. olive oil
Directions

    Trim fat from the pork, if necessary. Place each tenderloin between 2 sheets of plastic wrap and gently tap the pork with a rolling pin to flatten to half its thickness.

    Combine the bread crumbs, lemon zest, sage, salt and black pepper on a plate. Spread the flour on a separate plate; place the beaten egg in a small bowl.

    Coat the pork in flour, dip in the beaten egg, and then in the bread crumb mixture to coat.

    Heat the olive oil in a large skillet over medium heat. Sauté the pork until golden, about 4 minutes on each side. (Take care not to burn the bread crumbs.) Serve hot.

Grandma's Secret Tip

The best way to make fresh white or brown bread crumbs is to use stale (but not dried out) bread and to pulse the bread in a food processor. Or, you can grate the bread on the coarse side of a box grater.

Serve with steamed green beans and French fries. Deep-fry thin potato slices until golden, about 10 minutes.
