Garlic Flank Steak

Flank steak is tenderized with a zesty marinade of garlic and herbs, then it sizzles in a skillet until it’s done just right.

Flank steak is tenderized with a zesty marinade of garlic and herbs, then it sizzles in a skillet until it’s done just right.

Ingredients

Serves 4 

  • 1 cup chicken broth
  • 1/4 cup vegetable or olive oil
  • 2 tbsp. lemon juice
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 3 cloves garlic, finely chopped
  • 11/2–2 lb. flank steak
Directions

    Combine the broth, oil, lemon juice, basil, parsley, salt, pepper and garlic in a shallow glass dish.

    Add the steak to the broth mixture. Turn several times to coat. Cover and refrigerate for about 30 minutes to marinate.

    Place the steak in a 10-inch skillet. Cook over medium heat, turning once, untilthe steak is cooked to medium doneness,15–20 minutes. Serve.
