Gram’s Brunswick Stew

Ingredients

  • 12 ounces smoked ham, cut into 3/4- to 1-inch cubes
  • 1 cup sliced onion
  • 4 1/2 teaspoons all-purpose flour
  • 1 (14 1/2-ounce) can stewed tomatoes, undrained
  • 2 cups frozen mixed vegetables for soup
  • 1 cup chicken broth
  • Salt, optional
  • Black pepper, optional

Directions

    Spray a large saucepan or Dutch oven with nonstick cooking spray; heat over medium heat until hot.

    Add ham and onion; cook until ham is browned and onion is soft, about 5 minutes.

    Stir flour into ham and onion in saucepan; cook over medium to medium-low heat 1 minute, stirring constantly. Stir in tomatoes, mixed vegetables and broth; bring to a boil.

    Reduce heat to low; simmer, covered, until the vegetables are tender, 5 to 8 minutes.

    Simmer, uncovered, until mixture is slightly thickened, 5 to 8 minutes. Season stew to taste with salt and black pepper, if desired.

    Serve the stew over hot cooked rice, noodles or squares of corn bread, if desired.

    Variation: Substitute cooked boneless, skinless chicken breasts, cut into cubes, for the ham, if desired.
