Grilled Leg of Lamb

Ingredients

  • 1/2 cup olive oil
  • 1/3 cup dry red wine or 1/4 cup red-wine vinegar
  • 3 large cloves garlic, minced
  • 2 tablespoons dried thyme
  • 2 tablespoons dried rosemary
  • 1 1/2 teaspoons coarse salt
  • 1 leg of lamb (about 6 pounds), boned, butterflied

Directions

    Combine olive oil, wine, garlic, thyme, rosemary and coarse salt in a small bowl and mix well.

    Place lamb in a 13 × 9-inch dish. Pour olive oil mixture over lamb, turning to coat. Chill, covered, for 2 hours.

    Preheat the grill to medium. Place grill rack 8 inches from the heat.

    Remove lamb from marinade, reserving remaining marinade.

    Grill lamb, brushing frequently with the reserved marinade, until an instant-read meat thermometer inserted in center of meat registers 170ºF, about 40 minutes for medium rare.

Grandma's Secret Trick

Grill-baked potatoes were Grandma's easy side dish to prepare with this lamb. She oiled the skins of baking potatoes and microwaved the potatoes for 3 to 5 minutes to partially cook them. Then she placed the potatoes on the grill and baked them, turning them frequently, for 40 minutes.
