Ingredients

Serves 12

  • 4 tablespoons unsalted butter, softened
  • 2 garlic cloves, minced
  • 2 teaspoons finely chopped fresh parsley
  • 1 teaspoon grated lemon zest
  • 3/4 teaspoon salt
  • 3 1/2 pounds sirloin steak (about 1 1/2-inches thick)
  • 1/2 teaspoon black pepper
Directions
  1. 1

In a small bowl, mash the butter, garlic, parsley, lemon zest and 1/2 teaspoon of the salt with a fork. Roll up in plastic wrap to make a small log. Refrigerate until slightly firm or up to 1 week.

  2. 2

Prepare the grill. Grill the steak 5 to 6 inches from the heat, about 4 minutes per side for medium-rare.

  3. 3

Slice the steak about 1/2-inch thick. Season with the remaining 1/4 teaspoon salt and the pepper. Slice the butter log crosswise into rounds and use to top the steak slices.

Grandma's Secret Tip

Grandma's Secret Tip

For the aunts who were watching their weight, Grandma would top the steaks with a sprinkle of chopped up extra garlic, parsley and lemon zest instead of the garlic butter.
