Ingredients

  • 4 1/2 tablespoons butter, divided
  • 1/4 cup chopped green bell pepper
  • 2 tablespoons chopped onion
  • 2 1/2 tablespoons flour
  • 3/4 cup hot water
  • 1 (5-ounce) can evaporated milk
  • 2 tablespoons yellow mustard
  • 1 1/2 tablespoons lemon juice
  • 3/4 teaspoon Worcestershire
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 3/4 cups chopped, cooked ham
  • 12 slices white bread, trimmed
  • 1/2 cup shredded Swiss cheese

Directions

    Preheat the oven to 400°F.
  • 2
    Heat 11/2 tablespoons butter in a large skillet over medium-high heat. Sauté bell pepper and onion in hot butter until tender, about 3 minutes.

    Sprinkle flour over bell pepper mixture in skillet and stir until well mixed. Add hot water gradually, stirring continually. Cook, stirring continually, until thickened, about 2 minutes. Stir in the evaporated milk. Cook, stirring continually, just until thickened, about 2 minutes.

    Add mustard, lemon juice, Worcestershire sauce, salt and black pepper and mix well. Stir in ham. Keep warm.

    Melt remaining butter in a small saucepan. Press each bread slice into a muffin cup. Brush with melted butter. Bake until browned, about 6 minutes. Fill cups with the ham sauce. Sprinkle with Swiss. Bake until ham sauce is heated through, about 10 minutes. Serve immediately.

Grandma's Secret Trick

Grandma had a clever technique for turning these muffin-size cups into hors d'oeuvres. She cut circles out of the bread with a 11/2- or 2-inch biscuit cutter. Then she pressed the bread into miniature muffin cups and completed the recipe. Using this method, she had enough filling for 18 hors d'oeuvres.
