Ham with Raisin Sauce

Ingredients
Serves 12
- 1 (14-pound) fully cooked semi-boneless sugar-cured ham
- 20 to 25 whole cloves
- 1/2 (15-ounce) package raisins
- 1 1/2 cups firmly packed light brown sugar
- 2 teaspoons soy sauce
- 1/4 teaspoon ground cloves
- 1 (20-ounce) can crushed pineapple in heavy syrup
- Kale, optional for garnish
- Fresh pineapple wedges, optional for garnish
Directions

Preheat oven to 325°F. Remove rind from ham and trim fat. Score the surface in a diamond pattern and stud with whole cloves.

Place ham in a large roasting pan and tent with foil. Bake until a meat thermometer inserted in center of ham and not touching bone registers 150°F, about 15 minutes per pound.

Drain pan drippings into a blender container. Add raisins, brown sugar, soy sauce and ground cloves. Process until pureed. Pour mixture into a medium saucepan. Stir in the undrained pineapple. Simmer, stirring occasionally, for 15 minutes.

Brush ham with pineapple mixture. Bake the ham, basting with pineapple mixture every 10 minutes, for 1 hour longer.

Remove ham to a serving platter. Cool for 15 to 25 minutes before carving. Garnish with kale and fresh pineapple wedges, if desired.

Grandma had a way with leftover ham. She made ham sandwiches, creamed ham over egg noodles and ham loaf with honey mustard sauce. Then she boiled the ham bone with white beans, a little chopped onion and garlic, a bay leaf and seasonings to make delicious bean soup.
