Hearty Beef & Beans

Ingredients
Serves 8
- 1 tablespoon olive oil
- 1 1/2 pounds stew beef
- 1 teaspoon minced garlic
- 1 (16-ounce) can navy beans
- 1 (4-ounce) can chopped mild green chiles
- 1 1/2 cups water
- 1 (10-ounce) can tomatoes with green chiles
- 1 medium onion, chopped
Directions

Preheat the oven to 350ºF.

Heat olive oil in a large skillet over medium-high heat until hot. Sauté beef and garlic in hot oil until beef is browned, about 6 minutes. Set aside.

Spoon the beans into 8 individual bean pots or a 2-quart baking dish.

Spread green chiles over beans. Pour water and tomatoes with green chiles over the green chiles.

Sprinkle onion over tomatoes with green chiles. Top with sautéed beef. Bake, covered, for 2 hours. Serve hot.

Grandma's Secret Tip
Grandma's Secret Tip
On busy days, Grandma made this stewed beef in the slow cooker. She browned the beef according to the recipe directions, layered the ingredients as directed in a slow cooker, then covered it and cooked the mixture on LOW for 6 hours. She served this dish with plenty of corn bread for soaking up the pan juices.
