Herb-crusted Pork Roast

Ingredients

Serves 6 

  • 1/2 cup Italian parsley
  • 2 tbsp. fresh oregano leaves or 2 tsp. dried
  • 3 cloves garlic, crushed
  • 1 jalapeño pepper, deseeded
  • 1 bay leaf
  • 2 tbsp. olive oil
  • 1 tbsp. white-wine vinegar
  • 1 tsp. salt
  • 3 lb. bone-in pork roast
Directions

    Combine the parsley, oregano, garlic, jalapeño pepper, bay leaf, oil, vinegar and salt in a food processor bowl. Cover and process until the mixture forms a paste. Rub the mixture over the pork roast.

    Place the pork roast in a large resealable plastic bag. Seal the bag and marinate the pork roast in the refrigerator for 8 hoursor overnight.

    Preheat oven to 400°F. Transfer the pork roast toan ungreased large roasting pan. Roast until an instant-read thermometer inserted in the center of the pork roast reads 160ºF, about1 hour 20 minutes. Letthe pork roast rest for10 minutes beforeslicing. Serve.

No food processor? No problem! Just finely chop the parsley, oregano and jalapeño pepper, add the crushed garlic and proceed as directed. You can just omit the bay leaf.
