Maple Cranberry Pork

Ingredients

  • 1/2 cup fresh or dried cranberries
  • 1/4 cup ginger ale
  • 1 tablespoon maple syrup
  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 1 (1 1/2-pound) pork tenderloin, cut into 1-inch-thick slices

Directions

    For sauce, combine cranberries, ginger ale and maple syrup in a small microwave-safe bowl and mix well.

    Microwave cranberry mixture on HIGH (100% power) for 1 minute; stir to mix.

    For pork, heat the vegetable oil in a large skillet over medium heat. Sauté the onion in the hot oil until tender, about 4 minutes.

    Add pork to skillet. Cook until an instant-read meat thermometer inserted in the pork registers 160ºF, about 9 minutes per side.

    Pour cranberry mixture over pork. Simmer for 1 minute. Transfer pork to a heated serving platter. Spoon sauce over pork. Serve immediately.

Grandma's Secret Trick

When Grandma used fresh cranberries for the sauce in this recipe, she had an easy way to tell whether the sauce had cooked long enough: She listened for the cranberries to pop. This was easier to do (and a little less messy) if she cooked the sauce in a saucepan on top of the stove rather than using the microwave.
