Marinated Rib Roast

Ingredients
Serves 8
- 1/4 cup olive oil
- 1/4 cup port wine or red-wine vinegar
- 4 teaspoons onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried marjoram
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 boned, rolled rib roast (about 5 pounds)
Directions

Combine olive oil, wine, onion powder, thyme, marjoram, rosemary, salt and garlic powder in a small bowl and mix well.

Rub the olive oil mixture on all sides of the beef. Wrap beef in aluminum foil. Chill for 8 to 10 hours.

Preheat the oven to 325ºF.

Roast the beef, wrapped in foil, in a roasting pan for 1 hour. Fold back the foil.

Roast the beef until an instant-read thermometer inserted in center of meat registers 140ºF, about 13/4 hours.

The butcher in Grandma's grocery store was happy to prepare a rolled rib roast for her, but he didn't usually keep one on hand. So she found she had to plan ahead to get a rolled rib roast. By calling ahead to request one, she could pick it up the day before or early in the day she planned to cook and serve it.
