Ingredients

  • 1/4 cup olive oil
  • 1/4 cup port wine or red-wine vinegar
  • 4 teaspoons onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 boned, rolled rib roast (about 5 pounds)

Directions

    Combine olive oil, wine, onion powder, thyme, marjoram, rosemary, salt and garlic powder in a small bowl and mix well.
  • 2
    Rub the olive oil mixture on all sides of the beef. Wrap beef in aluminum foil. Chill for 8 to 10 hours.

    Preheat the oven to 325ºF.
  • 4
    Roast the beef, wrapped in foil, in a roasting pan for 1 hour. Fold back the foil.
  • 5
    Roast the beef until an instant-read thermometer inserted in center of meat registers 140ºF, about 13/4 hours.

By calling ahead to request one, she could pick it up the day before or early in the day she planned to cook and serve it.
