Grandma's Secret Trick
Grandma sometimes stretched this meat mixture to make six meat patties, as her mother had done during war rationing. She added 1 egg and 1 cup bread crumbs or crushed wheat flake cereal to the meat, then shaped the mixture and filled it with mozzarella cheese. The patties held together better in a skillet or broiler pan, so Grandma often fried or broiled them rather than grilling them.
Our family was amazed at how Grandma could whip up this satisfying dish at a moment’s notice.
No church supper was complete without this dish, a Reuben sandwich masquerading as a casserole.
For lunch the next day, we enjoyed sandwiches made with the leftovers of this pork loin.
