Muffin Meat Loaves

Grandma would make these little meat loaves when she had the grandkids for the weekend. Even the pickiest cousin loved the neat single servings!

Grandma would make these little meat loaves when she had the grandkids for the weekend. Even the pickiest cousin loved the neat single servings!

Ingredients

Serves 6 

  • 1 3/4 pounds lean ground beef
  • 1 cup barbecue sauce, divided
  • 1/2 cup seasoned bread crumbs
  • 1 large egg, beaten
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
Directions
  1. 1

    Preheat the oven to 400°F. Spray twelve 2 1/2-inch muffin cups with nonstick cooking spray.

    Combine the ground beef, 1/2 cup barbecue sauce, bread crumbs, egg, pepper and salt in a large bowl and mix well.

    Spoon the ground beef mixture into the prepared muffin cups and pat lightly.

  4. 4

    Spoon the remaining barbecue sauce over the tops of meat loaves. Bake until the ground beef is cooked through, about 20 minutes. Serve immediately.

Sometimes Grandma would add a little shredded carrot to the meat mixture for added nutrition. And if she didn’t have any store-bought barbecue sauce on hand, she’d make her own by mixing together 1/2 cup ketchup, 1/4 cup cider vinegar and 2 tablespoons brown sugar.
