Old-Fashioned Beef Brisket

Ingredients
Serves 12
- 1 whole well-trimmed beef brisket (about 5 pounds)
- 4 cloves garli, minced
- 1/2 teaspoon black pepper
- 2 large onions, cut into 1/4-inch slices and separated into rings
- 1 (12-ounce) bottle chili sauce
- 3/4 cup beef broth, beer or water
- 2 tablespoons Worcestershire saue
- 1 tablespoon firmly packed brown sugar

Preheat oven to 350°F.

Place brisket, fat side up, in shallow roasting pan. Spread garlic evenly over brisket; sprinkle with pepper. Arrange onion rings over brisket.

Combine chili sauce, beef broth, Worcestershire sauce and brown sugar in small bowl; pour over brisket and onions. Cover with heavy-duty foil or roasting pan lid.

Roast brisket 2 hours. Turn over brisket; stir onion rings into sauce and spoon over brisket. Cover; roast 1 to 2 hours longer or until fork-tender. Transfer brisket to cutting board. Tent with foil; let stand 10 minutes.

Stir juices in roasting pan. Spoon off and discard fat from juices. (Juices may be thinned to desired consistency with water or thickened by simmering, uncovered, in saucepan.)

Slice brisket diagonally across grain into thin slices. Spoon pan juices over beef brisket.

To make this brisket a complete meal, Grandma used to stir quartered red boiling potatoes and sliced carrots, parsnips or turnips into the juices during the last hour of cooking time. Then she served it with some fresh hot rolls or biscuits.
