Peachy Pork Picante

Ingredients
Serves 4
- 1 pound boneless pork loin
- 1 tablespoon taco seasoning mix
- 3 cups water
- 1 1/2 cups long-grain rice
- 1 tablespoon vegetable oil
- 1 cup chunky salsa
- 1/3 cup peach preserves
Directions

Cut the pork into 3/4-inch cubes with a sharp knife. Combine the pork with the taco seasoning mix in a resealable plastic bag and seal tightly. Shake to coat pork. Marinate in refrigerator, turning the bag occasionally, for 1 to 2 hours.

Combine water and rice in a microwave-safe bowl and cover. Microwave on HIGH (100% power) until water is absorbed and rice is tender, about 11 to 13 minutes. Cover to keep warm.

Heat the oil in a large nonstick skillet over medium-high heat. Add the pork. Cook, stirring frequently, until pork is browned on all sides, about 10 minutes. Stir in salsa and preserves. Reduce heat to low.

Cover the skillet. Simmer, stirring occasionally, until the pork is cooked through, about 20 to 25 minutes. Spoon over rice on a heated serving platter. Serve immediately.

Grandma's Secret Tip
If Grandma was out of taco seasoning, she made a quick substitution that saved the day. In a small bowl she mixed 2 teaspoons paprika, 1/4 teaspoon ground cumin, 1/4 teaspoon dried oregano, 1/4 teaspoon onion salt, 1/4 teaspoon garlic salt and 1/8 teaspoon ground red pepper.
