Salisbury Steaks

Ingredients

  • 1 pound lean ground beef sirloin
  • 3/4 teaspoon garlic salt or seasoned salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1 (8-ounce) package sliced white mushrooms or 2 (4-ounce) packages sliced exotic mushrooms
  • 2 tablespoons sweet vermouth or ruby port wine, optional
  • 1 (12-ounce) jar or 1 (10 1/2-ounce) can beef gravy
  • Fresh chopped parsley, optional

Directions

  • 1
Heat large heavy nonstick skillet over medium-high heat until hot, about 3 minutes. Combine ground beef, garlic salt and black pepper in small bowl; mix well. Shape the beef mixture into four 1/4-inch-thick oval patties.
  • 2
Place beef patties in skillet as they are formed; cook until browned, 3 minutes per side. Transfer to plate. Pour off drippings.
  • 3
Melt butter in same skillet; add sliced mushrooms. Cook and stir 2 minutes. Add vermouth, if desired; cook for 1 minute. Add gravy; mix well.
  • 4
Return patties to skillet. Simmer, uncovered, over medium heat, turning meat and stirring sauce until desired doneness, about 2 minutes for medium. Garnish with fresh parsley, if desired.

Grandma's Secret Trick

Unlike some Salisbury steaks that have a heavy, pastelike coating, Grandma's recipe was unbreaded and called for lean ground beef sirloin. She told us her version was closer to the original recipe created more than 100 years ago.
