Smothered Pork Chops

Ingredients

Serves 4 

  • 1 tablespoon vegetable oil
  • 4 bone-in loin pork chops (about 6 ounces each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 packages (8 ounces each) sliced button mushrooms
  • 1 package (1.25-ounce) mushroom and herb gravy mix
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley
Directions

    Heat the oil in a large skillet over medium-high heat. Season the pork chops with the salt and pepper. Cook until browned on both sides and cooked through, 6–8 minutes. Remove to a plate and cover to keep warm.

    Cook the garlic in the same skillet until fragrant, about 30 seconds. Add the mushrooms to the skillet and cook, stirring frequently, until softened, 6–8 minutes.

    Combine the gravy mix and 1 cup water in a large measuring cup. Pour over the mushrooms and bring to a boil. Reduce heat to low and cook about 1 minute longer.

    Turn off heat. Stir in the sour cream and parsley. Immediately spoon the sauce over the pork chops and serve.
