Super Stuffed Meat Loaf

60 minutes“Some of us didn't like olives when we were kids, so Grandma would make this with chopped fresh mushrooms instead of the olives.”
Ingredients
Serves 6
- 1 1/2 pounds ground beef
- 1 egg, beaten
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 slices boiled ham
- 2 slices mozzarella cheese
- 1/2 cup chopped green olives
Directions

Preheat oven to 350° F. Combine ground beef, egg, salt and pepper in a large bowl. Mix well.

Pat meat mixture into an 8 x 11-inch rectangle about 1/2 inch thick on an 18-inch sheet of waxed paper.

Arrange ham crosswise on beef mixture. Top with mozzarella. Sprinkle olives over cheese. Lift short end of waxed paper and roll meat loaf as for a jelly roll. Pinch seams closed.

Arrange beef roll in a loaf pan. Bake until cooked through, about 1 hour.

Cook this meat loaf in the microwave. Microwave on HIGH for 5 minutes, then on MEDIUM for 16 minutes or until the interior of meat loaf reaches 135 degrees. Reduce the power to MEDIUM-LOW and microwave for 4 minutes longer.
