Swiss Mushroom Burgers

Hearty, homemade burgers topped with melted Swiss cheese and mushrooms are a lunchtime taste sensation.

Ingredients

Serves 4 

  • 1 lb. ground beef
  • 2 tbsp. minced onion
  • 1 tsp. dried oregano
  • 1 tsp. dried sage
  • 1/4 tsp. salt, divided
  • 1/4 tsp. black pepper, divided
  • 5 oz. cremini mushrooms, sliced
  • 1/2 cup beef broth
  • 1 tbsp. soy sauce
  • 1 tsp. cornstarch
  • 4 thin slices Swiss cheese
  • 4 hamburger buns
  • 4 lettuce leaves

    Preheat grill or broiler to high heat. If using a broiler, line a baking sheet with aluminum foil. Combine the beef, onion, oregano, sage and 1/8 tsp. each salt and pepper in a large bowl.

    Shape the beef mixture into four 4-inch burgers. Grill, turning once, until medium doneness, 7–8 minutes, or until well-done, 10–12 minutes.

    Meanwhile, place the mushrooms, broth and soy sauce in a medium saucepan. Simmer for 2 minutes. Combine the cornstarch and 1/2 tsp. cold water to form a paste. Stir the cornstarch mixture into the pot and cook until thickened, about 1 minute. Add the remaining salt and pepper.

    Place a slice of Swiss on each burger. Grill until the cheese is melted, about 1 minute longer. Split the hamburger buns and place a lettuce leaf on each bottom. Add a burger and spoon the mushroom sauce on top. Place the top of the buns on the burgers and serve immediately.
