Texas Round Steak

Ingredients
Serves 6
- 2 tablespoons all-purpose flour
- 1/4 teaspoon dried thyme
- 1/8 teaspoon black pepper
- 1 1/2 pounds round steak
- 2 tablespoons vegetable shortening
- 1 medium onion, sliced
- 1/2 medium green bell pepper, sliced
- 1 (10 3/4-ounce) can tomato rice soup
- 2/3 cup water
- 1 teaspoon minced garlic
Directions

Combine flour, thyme and black pepper in a small bowl and mix well.

Dredge steak on both sides with the flour mixture. Cut steak into 6 pieces.

Preheat an electric skillet to 400ºF.

Melt shortening in skillet. Add steak, onion and bell pepper to skillet. Cook until steak is browned, about 3 minutes per side. Reduce heat to 220ºF.

Combine soup, water and garlic in a small bowl and mix well. Pour over the steak mixture; cover.

Cook, spooning sauce over steak occasionally, until the steak is tender, about 11/2 hours.

When Grandma first started making this recipe, she didn't have an electric skillet, so she adapted the recipe for the stove top. She placed the steak in a large nonstick skillet and browned it over high heat, then reduced the heat to low to simmer it.
