Baked Ziti Provolone

This warm, creamy casserole appeared at Grandma's brunches almost as often as at her suppers.

This warm, creamy casserole appeared at Grandma's brunches almost as often as at her suppers.

Ingredients

Serves 4 

  • 10 ounces ziti
  • 1 cup evaporated milk
  • 1/2 cup whole milk
  • 4 egg whites
  • 1 tablespoon Dijon-style mustard
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped green onions, with tops
  • 1/8 teaspoon black pepper
  • 4 ounces sliced provolone cheese
  • 2 tablespoons grated Parmesan cheese
Directions

    Preheat oven to 325°F. Spray 9-inch square baking pan with nonstick cooking spray; set aside.

    Cook pasta according to package directions, omitting salt; drain. Place in bottom of prepared baking pan.

    Meanwhile, combine evaporated milk, whole milk, egg whites, mustard and salt in a food processor or blender; process until very smooth.

    Sprinkle green onions over pasta. Pour egg white mixture over green onions. Sprinkle with black pepper and top with provolone cheese.

    Bake until heated through, about 35 minutes. Remove from oven. Sprinkle with Parmesan. Let stand about 5 minutes before serving.

Over the years Grandma cooked countless pots of pasta for salads, spaghetti and meatballs, and casseroles. A trick she discovered was to slightly undercook the pasta when it was going to be baked in a casserole. That way the pasta didn't become mushy during the additional cooking time in the oven.
