Bowties in Vodka Sauce

Ingredients
Serves 8
- 1 pound bowtie pasta
- 2 tablespoons vegetable oil
- 1/4 pound sweet Italian sausage, casing removed
- 1 medium onion, chopped
- 2 cloves fresh garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup whipping cream
- 1/4 cup vodka
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1/2 cup Parmesan shavings

Prepare the pasta according to package directions; drain, reserving 1/2 cup pasta water.

Heat the oil in a large skillet over medium-high heat. Add the sausage to the skillet, breaking it up as it browns, about 5 minutes. Add the onion and cook another 4 minutes. Add the garlic and cook 1 minute more.

Reduce the heat to medium-low. Pour the crushed tomatoes into the skillet with the whipping cream and vodka. Cook about 10 minutes, or until the sauce is smooth and glossy. If necessary, thin with some of the reserved pasta water.

Add the basil, salt, red pepper flakes and the drained pasta; toss to coat. Serve with Parmesan shavings.
