Grandma described the view from a sunny patio high above the clear, blue sea when she served this fresh-tasting, Mediterranean pasta.

Ingredients

Serves 6 

  • 4 medium tomatoes
  • 1 package (12 ounces) fettuccine
  • 3 tablespoons olive oil
  • 1 package (8 ounces) feta cheese with basil and tomato, crumbled
  • 1 can (3.8 ounces) sliced black olives, drained
  • 1/4 cup thinly sliced fresh basil leaves
  • 1/8 teaspoon freshly ground black pepper
Directions
  1. 1

    Chop the tomatoes into1/4-inch pieces. Set aside.

    Cook the pasta according to the package directions. Drain. Return the hot pasta to the pot. Add the oil.Toss to coat.

    Add the feta, chopped tomatoes, olives, basil and pepper to the pot. Toss lightly to combine. Serve immediately.

Grandma's Secret Tip

When Grandma could find them, she would use 1/2 cup whole, pitted black or green olives instead of the canned olives. Whole, pitted kalamata olives were an especially wonderful treat.

Serve with thick wedges of warm pita bread or flatbread and a green salad. For dessert, be sureto have baklava.
