Grandpa said this recipe was a good way for his cash-poor Italian family to stretch a little meat to feed a hungry crowd.

Ingredients

Serves 6 

  • 1 (19-ounce) package frozen cheese tortellini
  • 4 tablespoons butter
  • 1 cup half-and-half
  • 3/4 cup grated Parmesan cheese
  • 1 (10-ounce) package frozen peas
  • 4 ounces thinly sliced deli ham, julienned
  • 1 (4-ounce) can sliced mushrooms, drained
  • 1/2 teaspoon garlic powder
Directions

    Cook pasta using package directions; drain well. Keep warm.

    Melt butter in a medium saucepan over low heat. Stir in half-and-half and Parmesan. Cook, stirring frequently, until mixture is thickened, about 2 1/2 minutes.

    Cook peas using package directions.

    Add the peas, ham, mushrooms and garlic powder to the Parmesan mixture and mix well. Cook mixture until heated through, about 3 minutes.

    Place pasta on a serving platter. Spoon sauce over pasta. Serve immediately.

For the freshest texture in her frozen peas, Grandma developed her own unusual cooking method. Instead of cooking the peas according to the package directions, she just put them in a colander. Then, when it was time to drain the cooked pasta, she poured it over the peas. That's all the cooking that frozen peas really need.
