Ham & Green Tomato Pasta

We liked this pasta so much that it's a wonder any tomatoes in the garden were left to ripen.

Ingredients

Serves 6 

  • 16 ounces rigatoni
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 5 medium green tomatoes, chopped
  • 4 ounces smoked country ham, finely chopped
  • 6 fresh basil leaves, chopped
  • 1 beef bouillon cube
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 3/4 cup grated Parmesan cheese
Directions
  1. 1

    Cook pasta using package directions; drain well.

    Heat olive oil in a large skillet over medium-high heat. Sauté onion and garlic in hot olive oil until onion is translucent, about 3 minutes. Stir in green tomatoes. Reduce heat to low.

    Cook the mixture, stirring frequently, for 15 minutes. Mash tomatoes with a fork. Add a small amount of water if sauce is dry.

    Add ham, basil, bouillon cube, granulated sugar, salt and red pepper flakes and mix well. Cook for 10 minutes longer.

    Combine pasta, green tomato mixture and Parmesan in a large bowl and toss to mix well.
