Pasta & Smothered Onions

Ingredients
Serves 6
- 8 ounces wide egg noodles
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 large onions, cut into thin wedges
- 1 clove garlic, minced
- 1/2 cup chicken broth
- 1/8 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup shredded Bel Paese or Gruyère cheese
Directions

Heat butter and olive oil in a large skillet over low heat until butter is melted. Add onions and garlic; cover. Cook, stirring occasionally, until onions are tender, about 20 minutes.

Cook, uncovered, over medium-high heat, stirring frequently, until onions are golden, about 10 minutes.

Add chicken broth and black pepper to onion mixture. Cook, stirring frequently, for 5 to 10 minutes. Stir in the parsley. Keep warm.

Cook noodles using package directions; drain well.

Combine noodles, onion mixture and Bel Paese in a large serving bowl and toss to mix well. Serve immediately with additional cheese.

Grandma's Secret Trick
This flavorful pasta is good with all kinds of garnishes and additions. Grandma liked to top each serving with a spoonful of dilled sour cream. To make the herbed topping, she combined 1 cup sour cream and 1 to 2 tablespoons chopped fresh dill and mixed well.
