Pasta & Tomato Toss

Ingredients

Serves 6 

  • 12 ounces wide noodles
  • 2 tablespoons butter
  • 1/2 cup whipping cream
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2/3 cup grated Parmesan cheese
  • 1 (14 1/2-ounce) can stewed Italian recipe tomatoes, drained
  • Fresh basil leaves, optional for garnish
Directions
  1. 1

    Cook pasta according to the package directions; drain. Rinse with cool water; drain again.

    Melt butter in a large saucepan over medium heat. Stir in the whipping cream. Remove from heat. Add pasta and mix well.

    Combine the pasta mixture, green onions, chopped basil, salt and black pepper in a large bowl and mix well.

    Add Parmesan to pasta mixture and mix well.

    Spoon the pasta mixture into a salad bowl. Add the tomatoes and toss lightly to mix. Garnish with fresh basil leaves, if desired. Serve immediately.

Grandma's Secret Trick

When Grandma wanted to serve this pasta toss as an entree, she used fettuccine noodles. When she wanted to serve it as a side dish or chilled as a salad, she used small shell pasta and chopped the tomatoes very small. She added a few chopped fresh parsley leaves for a pretty touch of green and an extra fresh flavor.
